Masseria Siciliana**** - Palermo
The Masseria Siciliana was edified on the
late 18th century on the ruins of an ancient Saracen installation.
It was actually built in order to compete with Ferdinand III
de Borbon that in the "Ficuzza" Wood built his Regal
Hunting Mansion, the "Regio Casino".
The main mansion has been always hosting the ancestors of
the actual owners for the most part of the year and in the
past has always been the gathering point of several fox and
hare hunting sessions.
Situated 700 meters over the see level, the Masseria will
grant really pleasant and fresh stays also during the warmest
part of the summer.
In the land surrounding the Masseria, olive trees and grapes
are tilled to produce genuine oil and wine that will help
to enjoy your meals. Also you will find a garden where a lot
of different flowers, fruits, legumes and vegetables are tilled
in order to cheer your stay in Masseria. The strength of their
flavours and tastes will bring you in a peaceful and relaxed
dimension while the sun sets beyond the mountains outlining
the profile of the "Sleeping Giant".

Cooking course
The cook will offer you meals characteristic of the Sicilian
gastronomy, with particular attention to the products of Masseria
and its surroundings, products as cheeses, vegetables, legumes,
wine, olive oil and fruits.
Olive Picking
The cultivars are the typical ones of this area:
- Cerasuola;
- Biancolilla;
- Nocellara del Belice.
The harvest begins around mid-October and lasts one month.
The altitude, together with the anticipated harvest, guarantee
an optimal quality both in organoleptic and storage terms.
During the harvest, olives are gathered into small bored boxes
in order to avoid mashing, and to guarantee constant ventilation.
Olives are then crunched the same day and the extraction system
is kept "cold" (below 27°c).
The extracted oil is soon placed in steel silos. After a while
it is bottled without any other treatment or filtering. The
goal is to preserve all its natural characteristics. The eventual
presence of sediments is the best guarantee of a unsophisticated
product. The bottled oil is then stored away from heat sources
and light.
