Polpettone ripieno

Ingredients

300 grams minced beef,
½ kg beef, soft bread crumbs,
2 eggs,
milk,
grated pecorino cheese,
parsley,
2 boiled eggs,
caciocavallo cheese diced,
lard,
red wine,
1 tablespoon tomato paste,
salt and pepper.

Directions

Mix mince beef, soft breadcrumbs, which have been soaked in milk and then squeezed, 2 egg yolks, little pecorino cheese, chopped parsley, salt and pepper.
Place beef on table and rub salt all over. Roll up meat and rub lard all over. Roast with lard, onion, and add mince, turning often. Add salt and pepper and add red wine.
