The Consorzio Ricerca Filiera Lattiero-Casearia is a regional entity with public governance based in Ragusa.
The principle activity of the Consorzio is the study of traditional Sicilian dairy products and is geared towards the methods of small and medium traditional cheese-makers.
The Consorzio works towards the greater goal of elevating the production of historic cheese, made according to traditional methods, to the status of "works of art." These great cheeses should be considered among Italy's true cultural assets, among the other works of art for which the country is famous. The M.I.C.A.S (Mediterranean Institute of Culinary Art of Sicily) has the mission to study the history of Sicilian culinary art and the history of the ingredients.
